I have been making this recipe for a few years. It's a copycat recipe for Olive Garden from
Ingredients
Salt
Pepper
Garlic powder
Onion powder
Italian seasoning
6 garlic cloves, minced
2 medium onions, diced
3 pounds Yukon Gold potatoes, diced
10 to 12 cups chicken stock
4 to 6 cups chopped fresh kale, coarsely chopped
2 cups heavy whipping cream
12 pieces bacon, cooked and crumbled
Directions
1. Preheat oven to 425° and lay bacon in a single layer on a foiled baking sheet. Bake bacon for 15-20 minutes. Keep an eye on it to prevent burning. Let cool. Crumble or coarsely chop. Set aside
2. Heat a pot or Dutch oven. Once heated drizzle a little olive oil and add Italian sausage. Season with salt, pepper, garlic powder, onion powder, and Italian seasoning. Cook thoroughly until brown and move to paper towel lined plate.
3.Dice onions while sausage is cooking. Once sausage is done, move to plate. Add onions to pot/ dutch oven and sauté.
4. While onions are sauteing, mince garlic and dice potatoes. Add garlic when onions are golden. Sauté for a minute
5. Add potatoes, chicken broth and cooked Italian sausage to the onions and bring to a simmer. Salt and pepper to taste. Cook until potatoes are tender. Coarsely chop kale.
6. Once potatoes are tender stir in kale and heavy whipping cream. Simmer for another 5 minutes.
7. Serve, garnish with bacon bits and enjoy!!
