Momylia's Kitchen ~ Smashed potatoes
I first saw this recipe many years ago from Pioneer Woman and since I have tweaked it in my own way. I hope you enjoy!
Ingredients
Red potatoes, your choice on quantity
Salt
Olive oil
Black pepper
Garlic powder
Rosemary, dried or fresh
Butter
Cheddar cheese
1. Wash potatoes. I cut off any damaged spots. Place potatoes in a pot and cover with water. Add some salt to the water. Bring to a boil, and cook them until they are fork tender.
2. Preheat the oven to 425°.
3.Drizzle a foiled baking sheet with olive oil. Place tender potatoes on the sheet pan, leaving plenty of room between each potato.
4.With a potato masher, gently press down each potato until it slightly mashes. Repeat until potato is smashed and continue with remaining potatoes.
5.Drizzle the tops of each crushed potatoes with more olive oil. Add tabs of butter on top of potatoes. I try to do at least a slice per potato.
6.Sprinkle potatoes with kosher salt, fresh ground black pepper and rosemary. Top with cheddar cheese.
7.Bake 20 to 25 minutes until golden brown and sizzling.
8. Serve and enjoy!!!
