Momylia's Kitchen - Minestrone
Ingredients
1 medium-large onion, diced
2 Carrots, diced
2-4 ribs of celery, diced
Olive oil
15 oz can of diced tomatoes, or homemade diced and stewed you'd need 3-4 romas
2 Tbs tomato paste
1 parmesan rind, optional if you have one
1 1/2 tsp garlic powder
1 tsp onion powder
I tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
6 cups of chicken broth
1 can dark red kidney beans, drained
1 can navy beans, drained
2-3 Yukon gold potatoes, diced
3/4 cup Ditalini pasta
3 cups of spinach, coarsely chopped
2 Tbs butter
1/4 cup parmesan cheese
Instructions
1. Chop of the vegetables
2. In a large soup pot, saute the onions, celery, and carrots with the olive oil for a few minutes until onion and carrots begin to soften.
3. Add the tomatoes to the pot. Reserve the tomato juices if using canned tomatoes. Add the tomato paste, parmesan rind, garlic powder, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes. Sauté together for just a couple minutes.
3. Add the juices from the tomatoes, broth, and potatoes. Bring to a light boil, then reduce heat and simmer for 15 minutes.
4. Taste the soup and adjust seasoning with salt, pepper, or red pepper flakes as needed. Add the beans and simmer another 15 minutes.
5. Add the pasta when the potatoes are becoming tender and cook until potatoes are soft and pasta is al dente.
6. Stir in the spinach, butter and parmesan, stirring until melted. Serve and enjoy!!
