Momylia's Kitchen - Shepherd's Pie
Ingredients
2-3 lb of ground beef
Salt
Ground black pepper
Onion powder
Garlic powder
Dried Parsley, optional
2 medium onions, diced
48 oz of Chicken broth
12 oz bag frozen peas and carrots
2 packets of brown gravy mix
2 cups or cold water
1 stick of butter
Directions
1. Begin cooking ground beef in a heated pan. Season with salt, pepper, onion powder, garlic powder. Cook thoroughly.
2. Dice onions. Heat a separate pan and add some oil. Add the onions to heated oil and sauté.
3. Rinse and chop up potatoes and place in a stock pot. Season with salt. Add minced garlic. Pour over chicken broth. *Don't cover the potatoes with broth or water. Leave a little room on top. We don't want too much liquid or the potatoes will be soupy. Heat to a boil, stir constantly.
4. When the beef is fully browned add the sautéed onions and the bag of frozen peas and carrots and continue to cook until vegetables are cooked through.
5.In a container with 2 cups of cold water whisk in the 2 packets of brown gravy mix. Once combined pour into beef and vegetable mixture. Continue to heat, stirring constantly to prevent burning.
6. Oil a 9"x13" baking dish
7.Once potatoes are cooked thoroughly and soft add in the stick of butter.
8. Preheat oven to 425
9. Either with a hand masher, stand mixer or hand mixer mash the potatoes. Season with salt and black pepper and parsley if desired.
*Don't use a hand mixer in a non-stick pan
10. Pour beef and vegetable mixture into 9"x13" pan and spread evenly
11. Top the beef and vegetable mixture with the mashed potatoes and spread evenly.
12. Bake in oven for 20-30 minutes until the top starts to turn golden. * Place a sheet of foil on the rack below to catch any drippings.
13. Remove from oven and let rest 5-10 minutes and serve. Enjoy.
