Momylia's Kitchen - White Chicken Chili




Ingredients


Rotisserie Chicken

Oil

48 oz Chicken broth

2 cans of Great Northern beans

2 Cans of corn

4 oz can green chiles

1 tsp salt

1 tsp pepper

2 tsp Cumin

1 1/2 tsp oregano

1 tsp Chili powder

1/4 tsp Cayenne pepper

1 medium, or 2 small onions

4 cloves of garlic minced

Cilanto, chopped

1/4 - 1/2 cup of heavy whipping cream



Directions

1. De bone rotisserie chicken into a bowl

2. Heat crock pot to warm and add a drizzle of oil

3.Pour chicken broth into crock pot

4. Add great northern beans, corn, green chiles, salt, pepper, cumin, oregano, chili powder, cayenne pepper and shredded chicken. Mix well and set heat to high.

5. Dice onions. Heat a frying pan, drizzle some oil in pan and sauté onions. Add 4 cloves of minced garlic to sautéed onions and cook for about a minute, add sautéed onions and garlic to crock pot and mix in.

6. Chop cilantro. Add 1-2 tbs of chopped cilantro to chili and mix well

7. Add 1/4-1/2 cup of heavy whipping cream. Mix well. 

8.Cover and cook on low for 8 hours or high 3-4 hours.

9. Salt and pepper to taste if needed.  Serve topped with your choice of sour cream, jalapeños, cheddar cheese. Serve with tortillas, tortilla chips, corm bread or rolls. Enjoy !!
