Momylia's Kitchen - Tomato soup





I am just learning how to make tomato soup so I use the recipe from Joy food Sunshine I just double it





Ingredients 

Olive oil

20-25 Roma tomato

1 medium onion

10 Cloves of garlic

1/4-1/2 cup fresh Basil

4 Tbs butter

4 Tbs flour

48 oz Chicken broth

1/4-1/2 cup heavy whipping cream 


Directions 

1.Preheat oven to 425°

2. Oil baking sheet. Cut tomatoes into chunks, coarsely chop onions and peel garlic cloves. Place on oiled baking sheet. Drizzle a little more oil over top.

3. Bake for 25 -30 minutes 

4. Salt and pepper vegetables.  Move to a blender and blend until smooth. Once vegetables are blended add in fresh basil and blend again.

5. Add 4 tbs of butter to a pan and brown. Add 4 tbs flour and cook for 30-60 seconds.

6. Add chicken broth to roux. Add sugar. Mix well. Then mix in tomato blend. Mix well. Salt and pepper to taste.

7. Stir in desired amount of heavy whipping cream.  More if you like it creamer or less if you don't. Cook on medium low for about 15 minutes. 

8. Serve and enjoy!!
