Momylia's Kitchen ~ Sausage and tortellini soup





I use the recipe from The Cozy Cook but I double her recipe

 




Ingredients

2 pounds ground Italian sausage, hot or mild
2 yellow onions, diced
6 cloves garlic, minced
6 Tablespoons flour
2 teaspoon dried basil
1 teaspoon oregano
2 pinch cayenne, optional
1 teaspoon mustard powder
1/2 teaspoon pepper
2 pinch red pepper flakes
2 teaspoons hot sauce
2 cups heavy cream
10 cups chicken broth
4 cups kale, chopped
18-24 oz tortellini (refrigerated or frozen)


Instructions

1. Dice onions
2. Heat pan  over medium- medium high heat. and sautee onions.
3. While onions are sauteeing in a small bowl, mix together basil, oregano, cayenne, mustard powder, pepper, and red pepper flakes. Stir to combine.
4. When the onions are golden add the garlic and cook for 1 minute.
5. Remove the casings from the sausage if you purchased links. Crumble the sausage in the onions and garlic. Season with salt and pepper. Cook over medium-high heat until the sausage is cooked through. Drain grease. 
6. I like to de-stem and chop the kale while the sausage is cooking.
7. Once the sausage is cooked  add the flour and cook for 1-2 minutes.
8. Add mixed seasonings and hot sauce and stir to combine.
9.Add the chicken broth and use a silicone spatula or wooden spoon to “clean” the bottom of the pot. Slowly stir in the heavy cream. Bring to a boil, reduce to a simmer.
10. Add the kale and tortellini and simmer for 3-5 minutes. (If your tortellini needs longer cooking time, add the tortellini first, then the kale during the last 5 minutes.)
11. Salt to taste if needed.
12. Serve and enjoy!
