Momylia's Kitchen - Chili










    I have been making this recipe and variations of it for the last 16+ years. I use the recipe from AllRecipes and make minor adjustments.





Ingredients

2 pounds ground beef chuck

1 pound of Italian sausage

2 (30 ounce) cans chili beans, drained

2 (28 ounce) cans petite diced tomatoes with juice

1 (6 ounce) can tomato paste

3 stalks celery, diced

1 large yellow onion, diced

1 green bell pepper, seeded and chopped

1 red bell pepper, seeded and chopped

2 green chile peppers, seeded and chopped 

1 tablespoon bacon bits

½ cup beer, optional

4 cubes beef bouillon

1/4 cup chili powder, or more to taste

1 tablespoon minced garlic

1 tablespoon Worcestershire sauce

1 tablespoon dried oregano

2 teaspoons ground cumin

1 teaspoon dried basil

1 teaspoon cayenne pepper

1 teaspoon paprika

1 teaspoon white sugar 

1 teaspoon salt, or more to taste

1 teaspoon ground black pepper, or more to taste

2 teaspoons hot pepper sauce (such as Tabasco)  I used Frank's Red hot


Toppings and additions:

Corn chips 
Shredded Cheddar cheese
Sour cream
Tortillas



Directions

Step 1
Dice the celery, onion, bell peppers and chile peppers.

Step2
Heat a large stock pan over medium-high heat. Crumble ground ground beef  and Italian sausage into pan and begin to brown. Season with salt, pepper, onion powder, garlic powder, Cook, stirring frequently, until meat is evenly browned. Drain off excess grease. 

Step 2
Heat crock pot on low. Pour diced tomatoes, chili beans, and tomato paste into crock pot. Pour in the cooked meat.  Add celery, onion, bell peppers, chile peppers, bacon bits, bouillon, chili powder, garlic, Worcestershire sauce, oregano, cumin, basil, cayenne, paprika, sugar, salt, black pepper, and hot sauce (if using), beer (if using). Stir to blend, then cover and simmer over low heat for at least 4 hours, or high for 2 hours, stirring occasionally.


Step 3
Taste and season with more salt, pepper, if needed. The longer the chili simmers, the better it will taste. Turn off the heat and serve. Serve with corn chips, tortillas, cheddar cheese, and or sour cream. Enjoy!
