Momylia's Kitchen ~ Chicken tortilla soup

 




Ingredients


  • 3 Boneless skinless chicken breasts
  • 1-2 onions
  • 2-4 cloves of garlic, or 1 tbs of garlic from the jar
  • 15 oz can of corn, drained
  • 28 oz can or petite diced tomatoes, drained
  • 10 oz can of red enchilada sauce
  • 4 oz can of diced green chiles
  • 15 oz can of black beans, drained
  • 2 tablespoons of homemade taco seasoning
  • 48 oz chicken broth


Optional:

  • Limes
  • Cilantro
  • Tortillas
  • Tortilla chips
  • Jalapeños


Instructions

1. Coat the inside of the crock pot with olive oil, spread evenly

2. Trim the chicken breasts of excess fat, skin, cartilage, or bones. Place inside crock pot.

3. Dice up onions and place over chicken breasts,

4. Mince garlic. Add in minced garlic (use 1 tablespoon of pre-minced). 

5. Add in the can of drained corn, drained petite diced tomatoes, red enchilada sauce, can of green chiles, can of drained black beans and the 2 tbs of homemade taco seasoning. Stir

6. Cook on low for 8+ hours, or on high for 4-6 hors until the chicken id falling apart. When the chicken is done shred in the soup.

7. Top with your choice of fresh squeezed lime, chopped cilantro, cheddar cheese, or sour cream. Eat with tortillas or tortilla chips. Enjoy!!
