Momylia's Kitchen ~ Chicken Florentine

 





I had never tried it but was curious so I used the recipe from Better Homebase and I love it. I increased the quantity of ingredients for more servings.





Ingredients


  • 6-8Boneless, skinless chicken breasts or thighs
  • Italian seasoning
  • Salt
  • Pepper
  • Olive oil
  • 4+ tablespoons of butter
  • 6 cloves of garlic, minced
  • 2 cups of chicken broth
  • 2 cups of heavy whipping cream
  • 6 oz of Parmesan cheese
  • 10 oz of fresh spinach, coarsely chopped



Instructions

1. Trim the chicken breasts of excess fat, skin, cartilage, and bone.

2. Pound the chicken breast flat to even thickness. I then cut the breast in half you don't have to.

3. Season both sides of the chicken breasts with salt, pepper, and italian seasoning.

4. Heat a large pan or skillet over medium-medium high heat. Drizzle in olive oil and add 4 tbs of butter. Melt.

5. When the pan is hot add the chicken breasts and cook for 4-5 minutes each side, until golden brown.

6. Cooking only 4-5 pieces of chicken at a time once the chicken has been cooked to golden on both sides, remove to a plate and set aside and continue to cook remaining chicken. Add more olive oil and butter as needed.

7. While the chicken is cooking, Rinse and coarsely chop the spinach.

8. Once all of the chicken piece have been cooked and removed from the pan add the garlic and saute` for about a minute.

9. Add the chicken broth, deglaze the pan scraping the tiny bits from the pan. Let simmer about 2 minutes

10. Slowly stir in the heavy whipping cream. Add the parmesan cheese. Cook for another 3-5 minutes until the sauce is creamy. Reduce heat.

11. Add the spinach and cook until the spinach softens, about 2 minutes

12. Return the chicken to the sauce, spoon the sauce over the chicken. Cook for another 5 minutes, stirring often to prevent burning.

13. Remove from heat. Serve with your favorite pasta, or rice. Enjoy !!
