Momylia's Kitchen ~ Easy Potato Soup
My potato soup recipe that I've been making for more than 20 years now.
INGREDIENTS
5 lb Potatoes
Salt
48 oz Chicken broth
Garlic powder
4-6 Chicken bullion cubes
Pepper
1 stick of butter
1 cup of milk or heavy whipping cream, room temp or heated
Shredded Cheddar Cheese
Bacon Bits
Green Onions
Sour Cream
~Directions~
1. Wash and dice up potatoes and place in stock pot or dutch oven.
2.Add salt. Might have to add more to taste later.
3.Pour 48 oz of chicken broth over potatoes.
4.Add a few tablespoons of minced garlic. Stir well. Add 4-6 cube of chicken bullion.
5. Stir constantly to prevent sticking and burning. Bring the potatoes to a boil, and cook until fork tender.
6. Add a stick of butter, and mix in the warm milk or heavy whipping cream. Continue to stir. turn off heat.
7.Add pepper. You can also add parsley or paprika.
8.Sometimes I mash some of the potatoes to give a thicker consistency.
9.Serve and top with your choice of toppings like cheddar cheese, bacon bits, green onions and or sour cream.
