Momylia's Kitchen ~ Frozen Breakfast Sandwiches






Make a batch of frozen breakfast sandwiches to have on hand for busy mornings. This batch made me 12 english muffin sandwiches and 16 biscuit sandwiches.





INGREDIENTS

1 lb bacon
2 lb Breakfast sausage
Slice deli ham
28 eggs (14 for 1 tray)
Slice Cheddar cheese
2 pkg Pop Biscuits
2 pkg English Muffin
Salt
Pepper
Olive oil
Milk
Foil
Plastic Wrap
Freezer bags, gallon size



~Directions~
1.Preheat oven to 425 degrees.
2.Lay out bacon strips on a foil lined baking sheet.
3.Bake bacon for 15-20 minutes depending on thickness. Don't let it burn. Let bacon strips drain on a paper towel lined plate.
4. Set oven to 350 degrees.
5.In a 9x13" dish press breakfast sausage until it is flat and even.
6. In a mixing bowl crack open 14 eggs, add a splash of milk and whisk. 
7. In a separate  9x13" oil bottom and sides with olive oil. Pour in eggs
8. Salt and pepper eggs and sausage
9. Bake eggs and sausage in oven for 22 minutes.
10. Open pop biscuits and place on a parchments lined cooking sheet.
Bake at 350 degrees for about 15 minutes.
11. Cut eggs and sausage into twelfths.
12. Gently press and rotate english muffin in hands until it pops open, cut open biscuits.
13. Assemble sandwiches to your liking. English muffin or biscuit your choice of meat either breakfast sausage, bacon strips or slices of ham.
14.Add egg .Add sliced cheddar. Place top of sandwich.
15. Wrap each sandwich individually and store in a freezer zip lock bag. Label and date.
16. Reheat by microwaving for 1.5 to 2 minutes or until heated through.
