 Momylia's Kitchen ~ Frozen Breakfast Burritos










    Make a batch of frozen breakfast burritos to have on hand for busy mornings. This batch made me 15 small burritos and 7 large. This is a very versatile recipe. You can add or subtract as you like. I might add onions, bell peppers, maybe even some jalapeños to some of them next time. 







INGREDIENTS

1 lb bacon
2 lb Breakfast sausage
18--24 eggs
Fresh Hash browns, 2 20oz bags
Cheddar cheese
1 pkg Tortillas, Fajita size, 20 count
Hot sauce/Taco sauce of choice
Salt
Pepper
Olive oil
Milk
Foil
Plastic Wrap
Freezer bags, gallon size



~Directions~

1.Preheat oven to 425 degrees.
2.Lay out bacon strips on a foil lined baking sheet.
3.Bake bacon for 15-20 minutes depending on thickness. Don't let it burn. Let bacon strips drain on a paper towel lined plate.
4.In a mixing bowl crack open 18-24 eggs, add a splash of milk and whisk.
5.Heat a pan on medium, add a drizzle of olive oil. Add your eggs. Season with salt and pepper, Scramble.
6.Set oven to 400 degrees.
7.Add a generous amount of olive oil to a foil lined baking sheet.
8. Add hash browns, spread evenly. Drizzle more olive oil on top, add salt and pepper. Bake for 35-45 minutes.
9.In a heated skillet or pan add your breakfast sausage. Crumble. Add salt and pepper. Cook until browned.
10.Chop bacon.
11. Begin assembly with a warmed tortilla, add some hash browns, scrambled eggs, your choice of meat, some taco sauce or hot sauce, cheddar cheese.
12.Carefully fold in ends and roll.
13. Wrap each burrito individually and store in a freezer zip lock bag. Label and date.
14. Reheat by microwaving for 1.5 to 2 minutes or until heated through. The larger ones need more time to heat through.
